Pesto Egg Salad – hard-boiled eggs in a delicious pesto and dijon mustard dressing. Perfect for sandwiches or lettuce cups!
Peel eggs; set aside.
In a mixing bowl, whisk together mayonnaise, dijon mustard, pesto, red onion, celery, garlic, salt, and black pepper.
Diced eggs and add to the mayonnaise mixture; gently toss to coat.
Serve on bread with lettuce and tomatoes, if desired.
