Bacon Cheeseburger Gnocchi – Everything you love about cheeseburgers in a gnocchi dish! Cheesy gnocchi tossed with a homemade burger sauce, ground beef, and topped with crispy bacon and chopped pickles.

INGREDIENTS
 1 16 ounce package gnocchi 2 teaspoons olive oil
 2 teaspoons olive oil
 1 pound lean ground beef
 1 small white onion, finely diced
 2 cloves garlic, minced
 1 tablespoon ketchup
 1 teaspoon yellow mustard
 ¼ teaspoon salt
 ¼ teaspoon black pepper
 ½ cup water
 ½ cup heavy cream
 1 ½ cups cheddar cheese, shredded, divided
 6 slices bacon, cooked and crumbled, divided
 2 tablespoons pickles, diced
INSTRUCTIONS

Preheat broiler.

Cook gnocchi according to package instructions.

In a separate skillet, heat olive oil over meidum-high heat. Add ground beef and onion and cook, breaking up the beef, until onion is translucent and beef is cooked through.

Add garlic and cook until fragrant, about 30 seconds. Stir in ketchup, mustard, salt, pepper, water, and heavy cream. Bring to a simmer and let cook until thickened.

Remove from heat and stir in cooked gnocchi, 1 cup cheese and half of the bacon. Sprinkle the rest of the cheese on top.

Broil until cheese is melted, just a minute or 2. Sprinkle with the rest of the bacon and the pickles before serving.
