An Instant Pot is a pressure cooker that can also be used as a slow cooker, rice cooker, steamer, and yogurt maker. It was created by Robert Wang and released in 2009.

The Instant Pot is a countertop electrical appliance that has seven functions: Pressure Cooker, Slow Cooker, Rice Cooker/Porridge Maker, Yogurt Maker/Warmer, Sauté/Browning Pan, Steamer & Warmer and it can also act as a warmer for food.

  1. Wash and dry the chicken, cut it into bite-sized pieces, and season with salt and pepper.
  2. Add the sesame oil to the pot, then add the onion and garlic. Cook for about 2 minutes before adding in the carrots, water chestnuts, soy sauce, rice wine vinegar, honey, ginger root paste, or ground ginger and black pepper to taste.
  3. Add in the chicken pieces to coat them with all of the ingredients from step 2 before closing up your instant pot and cooking for 10 minutes on high pressure using a poultry setting (or high).

 1 tbsp sesame oil
 1 ½ pounds boneless skinless chicken breasts, cut into bite-size chunks
 ¼ cup honey
 ¼ cup soy sauce
 ¼ cup hot water
 3 cloves garlic, minced
 ¼ tsp crushed red pepper flakes
 1 tbsp cornstarch
 2 tbsp cold water
 1 tbsp toasted sesame seeds
 rice, for serving
 sliced green onions, for serving

Turn pressure cooker to saute setting. Add sesame oil. Once oil is hot, brown chicken.

Once chicken is browned, press cancel or stop.

In a small bowl, whisk together honey, soy sauce, hot water, garlic, and crushed red pepper flakes. Stir into pressure cooker.

Lock lid on pressure cooker and close pressure release valve. Adjust settings to pressure cook on high for 5 minutes.

Once done, quick release by carefully opening pressure release valve and removing lid once pressure is completely released.

In a small bowl, whisk togeher cornstarch and cold water. Pour into pressure cooker.

Press the saute button and let simmer until thickened, only a couple minutes.

Sprinkle with toasted sesame seeds.
