 ½ tsp lemon zest
 2 tbsp lemon juice
 2 tbsp olive oil
 2 tbsp red wine vinegar
 ½ tsp dried oregano
 ¼ tsp garlic powder
 ½ tsp salt
 ¼ tsp black pepper
SALAD:
 3 cups farro, cooked and cooled
 ½ cup cucumber, diced
 1 ½ cups grape tomatoes, halved
 ⅓ cup kalamata olives, halved
 ¼ cup red onion, thinly sliced
 4 ounces feta cheese

To make the dressing, whisk all ingredients together until combined.

To assemble the salad, Add all ingredients but feta cheese to a large mixing bowl. Drizzle dressing over top and toss to combine. Stir in feta before serving.
